Rochefort
          GlassThe brewery is located inside the Abbey of Notre-Dame de Saint-Rémy, near the town of Rochefort, and has been brewing beer since 1595. As with all other trappist breweries, the beer is only sold in order to financially support the monastery and some other good causes. The monks will not increase production based on demand or profit motives, but only enough to support themselves, resulting in a fairly limited supply of beer availability.

Rochefort 6 (red cap, brown beer, 7.5% ABV). Reddish colour, almost like autumn leaves, very consistent texture with a slightly spicy aroma and an intense taste of caramel, fruit, and hints of raisins. It is only brewed about once per year, representing approximately 1% of total beer production, thus is quite difficult to obtain.

PRODUCTION

FERMENTATION
7 days at 21/26ºC in controlled temperature stainless steel tanks.

MACERATION PERIOD

MALOLACTIC FERMENTATION
The wine is pumped to other stainless steel tanks and kept at 18ºC for malolactic fermentation to occur.

Winery

The making of a good wine is a task which involves many different and important aspects: know-how, time, perseverance and craft production among only a few of them.
But there is only one main factor in the whole history of wine and it is its origin. The location of the vineyards tells how that wine is and will be in the future.
The dry climate of the department of Lujan de Cuyo in the province of Mendoza offers cold winters, smooth springs and cool summers together with the special features of its limy and chalkey soils resulting an ideal mixture for obtaining a wine of unique features and famous all over the world.
In the Valley de Aminga, province of La Rioja, there is a naturally privileged place in the middle of the desert for the development of high range products. Sandy and deep soil, dry climate, scarce rains, hot summers and very cold winters provides the ideal eco-system for a high quality wine at 1,450 meters above sea level.
The Hauilai region in China is a well known wine production region in Asia. It has continental weather, four well differentiated seasons, lots of sun, reasonable rains and a wide thermal range between day and night which are, needless to say, the ideal conditions for an excellent wine.

The Singleton of Dufftown 18yro

This older 18 year old version of The Singleton of Dufftown, builds on the success of the 12 and 15 year old, bringing more complexity to the spirit.

Rich and mellow; shows a perfect balance between soft, ripe apple and blackberry fruit and spicy dryness. Deep amber appearance; most attractive, good texture. Soft, inviting, dry and autumnal nose. Sweet, stewed fruits, ripe autumn apples and rich berry fruits. Roasted nuts; hazelnut, walnut. Fragrant wood. Then a rich vanilla and toffee smoothness. A little water restores the appetizing fruit. Light to medium body, softly coating the tongue. Firm to full palate. Dry and sweet; nuts, dark toffee and gentle mint, rhubarb and apple juice. Deeper hint of almond biscuit. Dries, with a rich, silky cocoa bitterness, growing spicy. Water brings up sweet fruit, now blackberries. Long, smooth and warming finish. Sweetness softly introduces a longer, drying oakiness. Stewed-fruit freshness. Wood-smoke spiced with faint black pepper.
