The grapes for this blend are selected from the oldest Cabernet Sauvignon vines in Cuccino and the finest Merlot. The Cabernet Sauvignon, planted in 1932, has the same unique DNA that the founder of the winery, Don Luis Cousino, brought from France in the 1860s. This is the vine that was planted in Europe before the phylloxera. The natural yield is 4 tons per hectare. After the grapes are ripe, they are picked by hand, packed in 10kg boxes, and sorted again at the cellar. After 7 days of cold maceration at 7°C, the
alcoholic fermentation starts for 7-10 days, with the fermentation temperature of Merlot at 25°C and Cabernet Sauvignon at 26°C, during which gravity pump over 3-4 times. It is then divided into new small oak barrels for several months, where the malolactic fermentation is completed. After 15 months, the winemaker decides which wines to use in the blend. For the entire process, the wine spends 18 months in oak barrels and then ages in bottle for at least 3 years.
GRAPE VARIETIES: Cabernet Sauvignon, Merlot COLOUR: Deep, bright and intense red-brickish NOSE: The aroma is complex and intense, with prominent black fruits like plums, blackberries. Figs, strawberries and cherries can also be found. Floral aromas such as violets, herbal such as eucalyptus leaves, spices like cinnamon, vanilla, cedar and tobacco can also be felt. PALATE: On the palate it is supple, elegant and full-bodied. The tannins are silky, the fruit is persistent and the finish is long. 14.1% ABV Additional Information
