Blend: Cabernet Sauvignon 86%•Merlot 14% Grape source:100% Coastal Region Wine analysis: Alc 14.00% • RS 4.3g/l • TA 5.3g/l • pH 3.57 Winemaking techniques Grapes from several dry-farmed vineyards in the Agter-Paarl region. The grapes were hand-harvested at optimum ripeness and given a two day cold maceration. Fermentation took place over 5 days in stainless steel tanks with regular pump-overs. Just before dryness, the wine was pressed and put back into tank for malo-lactic fermentation. 14% ,Merlot blended into the wine to add softer, rounder tannins with plum and blackberry notes. 5% of the wine was matured in new 225L American oak barrels, with an additional 25% of the wine matured in older barrels. Barrel maturation of 12 months overall. Fined and filtered before bottling Wine description & food pairing A typical South African Cabernet with a pleasant combination of new world fruitiness and old world elegance. . Garnet colour with a ruby rim, this wine has herbaceous aromas of mint and smoky tobacco followed by dark cherry and cassis on the palate. Full-bodied in style with smooth tannins and a lingering finish. Pair with equally rich food such as matured cheese, red meat in particular as well as poultry and creamy sauces.
