Quick Overview

Cousiño Macul wines are produced, vinified and bottled at source, a characteristic in common with the great wineries of the world. The whites are known for their elegance, fruity richness and balanced acidity, while the reds are recognized for their roundness, balancing varietal fruitiness, body, complexity, deep color and excellent acidity. The correct mix of these elements gives rise to wines that can be drunk young, but also have the capacity to age and mature.

Family owned since 1856, Cousiño Macul is one of the 'grandees' of Chilean wineries, the estate complete with racing stables extends to some 267 hectares of vineyards, situated between the sprawling suburbs of Santiago and the wall of the Andes Cordillera.

Details

High-quality grapes are carefully selected at the time of picking and transported to the workshop in 10kg boxes, where they undergo a 1-week cold maceration at 7°C, and then infuse with yeast. Different varieties are fermented separately at 25-26°C for 10 days. Post-fermentation and maceration last for 10 days before the liquor is sent to new oak barrels where it undergoes malolactic fermentation. After 15 months, the three varieties are blended and aged for another 3 months. It is then aged in bottle for at least two years.
